Roxy's Rawnola recipe - gluten free & Vegan

It’s naturally sweet, chewy, and totally addictive in my opinion. Only natural whole foods, no added sugar or salt.


This is my new favourite morning bowl or on the go energy snack. It’s so easy to make with only 4 ingredients in under 5 minutes. It’s naturally sweet, chewy, and totally addictive in my opinion. Only natural whole foods, no added sugar or salt. What more do you want from your breakfast. It's great to make in big batches and store in a mason jar to sprinkle on top of smoothie bowls, yogurt bowls, cereal bowls or as an energy ball . 

  

Ingredients

✘2 cups of pitted dates

✘ 2 cups of oats (i used gluten free oats)

✘ 1/2 cup of dried coconut flakes

✘1/3 cup of walnut halves 

✘ 1 drop of vanilla extract 

Ingredients may vary and you may need more dates or more oats depending on how dewy your dates are or the texture of your oats.

Want a chocolate twist use raw vegan chocolate or cocoa or cacao powder (if you’re making the chocolate version) or feel free to add whatever type of nuts, seeds, dried fruit and superfoods you like!


Method

  1. Using your large food processor, add equal amounts of all ingredients. Also if dates are really dry I soak them in a bowl of cold water for 1hour or so to soften them.
  2.  Blend and pulse until well combined and forms a clump, thats when it good to roll into balls, if its to crumbly you may to to add more dates or sweeter(add small amount and slowly)
  3. (If you are making the chocolate version add ¼ of a cup of vegan chocolate or cocoa or cacao powder
  4. Grab small amounts at a time and roll into balls between you palms, when rolled fell free to dip into more shredded coconut! Or leave how it is and just use as cereal or to sprinkle over milk or yogurt
  5. Store them in the fridge
